Vulcan Convection Oven Fan Test
Convection Oven Fan Questions

has anyyone cooked a turkey breast side down?
also,is it a good idea to set my oven to convection,or normal?–convection uses a fan and i really don’t want it to cook to quick.–by the way the culinary inst. says that breast down will make the breasts juicier as the drippings naturally baste from top down
Cooking it breast side down will make it juicy, but ugly as hell. About one hour before it’s done, flip it over, brush it with some melted butter and let it brown.
